Chicken David

I am not sure where the origin of this recipe is derived from.  All that I can tell you is that it's a winner.  What's not to love?  Chicken sauteed in a Sherry Cream sauce with proscioutto and salami......like I said what's not to love!  Not to mention it's super easy.  I didn't have mushrooms on hand, so we did without this time.  Will add them the next time.
3 tablespoons butter

1onion, chopped

8 fresh mushrooms, thinly sliced

2 clove garlic, chopped

1/4 pound thinly sliced prosciutto, cut into strips

1/4 pound thinly sliced hard salami, cut into strips

4 boneless, skinless chicken breast halves

1/2 cup all-purpose flour

salt and pepper to taste

1/2 cup dry sherry

1 cup chicken broth

1/2 cup heavy cream

1/2 cup marinara sauce

1 tablespoon butter

2 tablespoons chopped fresh basil

 

1.)  Melt 3 tablespoons butter in a large heavy skillet over medium heat. Saute onion until soft and translucent. Stir in mushrooms, garlic, prosciutto and salami.

2.)  Dredge chicken in flour, and place in pan. Season with salt and pepper. Cook chicken 5 minutes on each side.

3.)  Pour in sherry, and cook until liquid is reduced by half.

4.)  Stir in chicken broth, cream and marinara. Simmer until sauce is reduced to your preferred consistency. Stir in 1 tablespoon butter, and sprinkle with basil.
