These cookies are another Christmas family standard. They are so delicious. Buttery and they will melt in your mouth. To make these cookies you will need:
1/2 cup powdered sugar
1/2 cup butter, softened (Vegan - Earth Balance)
1/2 cup oil
1 teaspoon almond extract
2 eggs (Vegan - Ener-G egg replacer)
1 package instant pistachio pudding
2 cups all purpose flour
1/2 teaspoons baking powder
1/2 cream of tartar
1/8 teaspoon salt
1/2 cup chopped pecan
1/2 cup sugar
1.) In large bowl, Combine powdered sugar, margarine, oil, almond extract, eggs, pudding mix and food coloring; mix well.
2.) In separate bowl, mix together flour, baking soda, cream of tarter and salt; mix well. Add dry ingredients to egg mixture; mix well. Stir in pecans. Cover with plastic wrap; Refrigerate 1 hour for easier handling.
3.) Heat oven to 375 degrees. Shape dough into 1 inch balls; roll in sugar. Place 2 inches apart on ungreased cookie sheets. Bake 10 to 15 minutes or until edges are light golden brown. Approximently 4 dozen cookies.
