Homemade Bailey's Irish Cream - Vegan

I have made Bailey's the traditional way in the past, but I was trying for something special for my daughter coming to visit this weekend.  I have got to say that this is better than the traditional!  So much flavor and so easy.   All this takes is five simple ingredients:
1 can of light Coconut Milk
1 regular can of Coconut Milk
1/2 cup of brown sugar
3/4 cup of strong espresso
1 cup of Irish Whiskey



1.)  In a medium saucepan, pour both cans of Coconut Milk.  Whisk the Coconut milk until smooth.  Next whisk in the brown sugar.  Bring to a low boil and simmer for approximately 8 minutes.  Whisk frequently.  It should thicken and reduce slightly.   Remove from heat.
 





2.)   While this is cooking, brew a cup of espresso.  Once the espresso and the Coconut Milk is done.  Combine the two.  (Please use only espresso, American coffee will not give the finished product the correct flavor.


 
 

 3.)  Whisk in the Irish Whiskey.  Strain into a bottle and store in the refrigerator.  This will separate upon standing, so gently shake it before serving.  Enjoy!
