Really Good Baked Onion Rings

Sometimes we accidentally stumble on a recipe that blows us away.  This was one of those times.  My husband loves the Pennsylvania Dutch fat hard pretzels.  He bought a package that was so hard, they were pretty much destined for the garbage can!   Mr. can't cook said, "Why don't you use them for breadcrumbs?"  Kudos to Mr. can't cook.  This rocked!  For the onion rings all you need are:
1 Large Onion
1/2 cup of pretzel crumbs (2 decent size pretzels)
1/2 cup egg substitute
1/4 tsp garlic powder
Pam

1.)  Heat the oven to 375 degrees.  Spray a cookie sheet with Pam and put aside.  I use foil to cover the pan and make clean up easier.
2.)  In a food processor or mini chopper, pulse the pretzels until you get crumbs.  Pour onto a plate and stir in the garlic powder.
3.)  Cut of the ends of the onion, peel off the skin, slice into 1/4 inch rounds and separate into rings.


4.)  Put the Egg substitute into a bowl.  Using a fork, dip the onion rings into the egg, shaking off the excess and then dipping in the pretzel crumbs.  Arrange on the cookie sheet in a single layer.
5.)  Bake for approximately 30 minutes (or until they are crunchy).
6.)  Optional, lightly sprinkle with salt and enjoy.

Low calorie and delicious, what a combination!
